Billington's Dark Muscovado Sugar is unrefined cane sugar from the range of dark sugars produced by the British brand Billington's. Rich in natural molasses, which sets it apart from white table sugar, it retains the original flavours of sugar cane. Origin: Mauritius.
It resembles dark chocolate in appearance and has a rich, gingerbread-and-molasses aroma – reminiscent of the scent of freshly baked gingerbread. Its sweetness is comparable to that of white sugar, but with the added depth of a caramel and molasses flavour. Indispensable in fruit cakes, brownies, toffee sauces and meat marinades.

Uses
Baking sugar with an intense molasses flavour: fruit cakes, gingerbread, brownies, sticky toffee pudding, chocolate muffins, oatmeal cookies. It also works well in marinades for barbecued meats (BBQ), Bolognese sauce, dark game sauces, ham glazes and homemade syrups. Vegan.
Directions for use
Use as you would ordinary sugar in a 1:1 ratio – the intense molasses flavour comes into its own in chocolate and gingerbread bakes, so it works particularly well in cakes with a deep flavour. For BBQ marinades: mix 2 tablespoons of sugar with soy sauce, garlic, ginger and a dash of olive oil. In meat sauces: add a teaspoon whilst stewing to balance the acidity of the tomatoes.
Storage
Store in an airtight container in a dry, dark place. Protect from moisture – if the sugar hardens, you can crumble it with a fork or wrap it briefly in a damp towel.
