Ziółko Ceylon Cinnamon is true cinnamon (Cinnamomum verum) from Sri Lanka in loose form – the most highly prized variety of cinnamon. It is obtained from the inner bark of the cinnamon tree, which is pre-processed, sun-dried and ground.
It owes its sweet, spicy flavour and aroma to its cinnamon oil content. In European cuisine, it is mainly associated with festive baking and desserts, but in Indian, Persian and Turkish cuisine, it is commonly used in savoury dishes – traditional garam masala blends, pilafs and mutton dishes.
Uses
A spice for baked goods (apple tarts, yeast cakes, gingerbread, cinnamon rolls, pancakes), porridge, desserts (baked apples, rice pudding, compotes), and drinks (masala chai, cinnamon coffee, mulled wine). It also works well in savoury dishes from Middle Eastern cuisine – garam masala, pilaf rice, lamb tagine.
How to use
Add to dough whilst kneading (typically 1–2 teaspoons per sponge cake or 500 g of flour), sprinkle a pinch over porridge before serving, and add a teaspoon to compotes whilst cooking. Ceylon cinnamon has a milder aroma than the more common cassia cinnamon – you can use a larger amount without the risk of bitterness.
Storage
Store in an airtight container in a dry, dark place, protected from light, moisture and foreign odours.
